Chicken and Rice Casserole

This recipe is pretty easy to make and so tasty.  Since everyone is different, it is a great recipe to change up and make it your own.  I boiled the rice before hand.  You can use minute rice or you can use uncooked rice and cook the casserole a lot longer to allow the rice to cook in the oven.  Just remember to keep the casserole wet.
1 (3-4 lb.) whole chicken
6 c. uncooked Minute rice
Salt and Pepper to taste, with other seasonings that you like
2 lb. grated sharp Cheddar cheese
2 can cream of chicken soup
1 pkg frozen peas

Boil chicken and de-bone. Set aside. Cook rice. Set aside.Combine soup and 1 can of broth from chicken, or can and 1/2 can of milk. Stir. Add chicken, peas, half cheese amount and soup mixture together. Mix well. Add rice and cheese mixture. Spread into casserole dishes. Cook at 350 degrees for 20-30 minutes. Top casseroles with more cheese. Makes 8-12 servings.

Gulliver's Cream Corn

2 (10-oz.) pkgs. whole kernel corn
1/2 pint whipping cream
1/2 pint half and half
1 tsp. salt
1/4 tsp Accent
6 tsp. sugar
pinch white pepper
2 T. melted butter
2 T. flour

Combine all ingredients except butter and flour.  Bring to a boil, and then simmer for 5 minutes.  In a separate pot, blend flour with butter to make a roux. Add roux mixture to corn mixture.  Mix well while simmering.  removed from heat and serve.

Holiday Sweet Potatoes

1 lb. cooked and mashed sweet potatoes of yams  OR 1 large can drained mashed yams or sweet potatoes
1 cup sugar
1/2 cup melted butter
2 eggs
1 tsp vanilla
1/3 cup milk

1/2 cup brown sugar
1/2 cup flour
1/3 cup butter-softened
1/2 cup chopped pecans

Mix sweet potatoes (or yams), sugar,. butter, eggs, vanilla and milk.  Put in Casserole dish.

In separate bowl put all topping ingredients together.  Then sprinkle over potatoes or yams in casserole dish.

Bake at 350 degrees for 40 minutes or until top is browned.

Grilled Chicken with Lime and Cilantro

6-8 boneless, skinless chicken breasts                                                  
2 limes, juiced
1 bunch cilantro                                                                                   
1/2 tsp. garlic
1/2 bunch parsley2 T. olive oil                                                             
1 tsp. shallots
2 T. white wine or white grape juice                                                      
1.2 tsp. red chili pepper, dried and                                                                                                               crushed

Mix all dressing ingredients; pulse in a blender or food processor until blended.  Pour over chicken, chill and marinate for at least 2 hours. cook on grill, about 7-10 minutes, depending on thickness of the chicken.  Serve with Salsa Fresca (below).

Salsa Fresca
6 roma tomatoes, diced fine                                                                
1 jalapeno pepper, minced
1/4 cup cilantro, minced                                                                      
1 clove garlic, minced
juice of 1 lemon                                                                                  
1/2 red onion, chopped
1-2 T. red wine vinegar                                                                      
1/4 cup olive oil

Combine all ingredients; allow to chill before serving.  Makes about 1 cup salsa.

My Favorite Beef Casserole

1 lb. ground beef
1 (16 oz.) noodles, any kind of noodle, cooked and drained 
1 onion, cut up                                                                             
1 (15 oz.) can corn                                                                        
1 (8 oz.) cream cheese, grated or chunk
1 can Cream of Mushroom soup                                          
1 (15 oz.) can diced tomatoes

Brown beef with onion, drain.  Mix soup, tomatoes and cream cheese together.  Add noodles, meat, corn and desired spices.  Put in casserole dish and bake in oven at 350 degrees until warmed through.  Fresh mushrooms can be added and/or grated cheese.

German Pancakes

This is one of the first recipes I ever learned. Also one of my favorite breakfast foods.  I love to watch it rise in the oven and see how tall it can be, then watch it fall as it cools off.  Some recipes call for less eggs, however less eggs equal less rise and less fluff. 
Like with all pancakes, syrup is great.  But I always preferred homemade jam on mine.  Either way, it is enjoyable.

German Pancakes

1 Cup of Flour
1 Cup of Milk
6 eggs
Dash of nutmeg and salt

Turn the oven to 400 degrees.  Place a half stick of margarine in 8X8 pan.  Butter can be used but be careful not to burn it.  Then put the pan in the oven and melt the margarine.  Place all ingredients in a blender and blend together.  Take the, now very hot pan out, and pour ingredients in.  Bake for 15-18 minutes or when all puffed up and golden brown on top.
