Grilled Chicken with Lime and Cilantro

6-8 boneless, skinless chicken breasts                                                  
2 limes, juiced
1 bunch cilantro                                                                                   
1/2 tsp. garlic
1/2 bunch parsley2 T. olive oil                                                             
1 tsp. shallots
2 T. white wine or white grape juice                                                      
1.2 tsp. red chili pepper, dried and                                                                                                               crushed

Mix all dressing ingredients; pulse in a blender or food processor until blended.  Pour over chicken, chill and marinate for at least 2 hours. cook on grill, about 7-10 minutes, depending on thickness of the chicken.  Serve with Salsa Fresca (below).

Salsa Fresca
6 roma tomatoes, diced fine                                                                
1 jalapeno pepper, minced
1/4 cup cilantro, minced                                                                      
1 clove garlic, minced
juice of 1 lemon                                                                                  
1/2 red onion, chopped
1-2 T. red wine vinegar                                                                      
1/4 cup olive oil

Combine all ingredients; allow to chill before serving.  Makes about 1 cup salsa.
