Crock Pot Salisbury Steak

  • 2  pounds lean ground beef
  • 1 (1 ounce) envelope dry onion soup mix
  • 1/2 cup Italian seasoned bread crumbs, or plain and add 1 tblsp of Italian seasoning
  • 2-4 squirts of Worcestershire sauce
  • handful of Parsley
  • Salt and Pepper
  • 1/4 cup milk
  • 1/2-1 cup all-purpose flour
  • 2 tablespoons vegetable oil
  • 2 (10.75 ounce) cans condensed cream of mushroom soup
  • 1 (1 ounce) packet dry au jus mix
  • 3/4 cup water
  • 1 package fresh mushrooms,sliced or 2 cans of sliced mushrooms 

In a large bowl, mix together the ground beef, onion soup mix, bread crumbs, spices and milk using your hands. Shape into 8 patties.

Heat the oil in a large skillet over medium-high heat. Pat down the patties in the flour.  I covered them thickly.  Place in frying pan until brown on both sides. Place browned patties into the slow cooker stacking alternately like a pyramid. 

In a medium bowl, mix together the cream of mushroom soup, au jus mix, and water. Pour over the meat. Cook on the Low setting for 4 or 5 hours, until ground beef is well done. 

Make sure to keep an eye on the crock pot.  Mine was cooked closer to 3 hours.

Frog Eye Salad


1 cup sugar
2 tbsp. flour
2 ½ tsp. salt
1 ¾ cups pineapple juice
2 eggs beaten
1 tbsp. Lemon juice
3 qts water
1 tbsp. cooking oil
1 pkg (16 0z) accni de peppi pasta
3 cans (11 oz) mandarin oranges drained
2 cans (20oz.) pineapple chunks drained
1 can (20 0z.) crushed pineapple drained
1 carton (9 oz) cool whip
1 cup miniature marshmallows
1 cup coconut

In a pot, combine sugar, flour and ½ tsp. salt.  Gradually stir in pineapple juice and eggs.  Cook over medium heat stirring until thickened.  Add lemon juice.  Cool mixture to room temperature.  Bring water and remaining 2 tsp. salt and oil to boil.  Add pasta…cook Al-dente.   Combine egg mixture and pasta.  Mix thoroughly.  Put in airtight container over night.  Add remaining ingredients next day and stir…then serve.

Banana Bars

1 ½ cups sugar
1 ½ cups butter (can be halved)
2 eggs
1 tsp. vanilla
2 cups flour
¾ cup buttermilk
4 mashed bananas
1 tsp. soda
½ cup chopped nuts (walnuts are best)

Mix all above ingredients.  Pour into a greased 11 X 14 pan.   Bake at 350 deg. for 30 minutes.  Cool and frost with the following ingredients:

3 oz. softened cream cheese
½ cup softened butter
2 cups powdered sugar
1 tsp. vanilla

Taco Casserole

1 bag egg noodles
1 can kidney or black beans, rinsed and drained
1 can diced tomatoes, not drained
1 small can of olives (optional)
1 can of corn, drained
Ground beef
1 package of taco seasoning
1 can Cream of Mushroom soup
1/4 C Water
Cheese

Fry ground beef until brown.  Drain fat.  Stir in taco seasoning.  Add beans, corn, tomatoes and olives (if desired) to meat.  Stir.  Boil noodles, al dente.
Spray a casserole dish (medium size) with Pam or something and add a layer of noodles.   Then add a layer of meat mixture, then a layer of cheese.  Repeat layers.  On the top add the soup, already mixed with water, to the casserole.  Add a layer of cheese.
Bake at 350 for about 20 minutes or until warmed through.
